Hard 40 minutes 1 stuffed zucchini half

  • Chicken Breast 1/2 cup
    Boiled and finely shredded

    Overcooked until very soft
  • Zucchini 1 medium
    Halved lengthwise and seeds scooped out

While that's going, scoop the seeds out of your zucchini halves. Steam the zucchini boats for about 8-10 minutes until they are fork-tender but still hold their shape.

Mix the shredded chicken, soft rice, and grated ginger together. Stuff the mixture into the zucchini boats and let it cool to room temperature before serving.
